I was searching for adorable cupcakes to make for our upcoming Easter celebration and came up with these adorable Carrot Patch Cup Cakes! I made these today to give them a try before the actual event and they turned out so cute that I thought I would make a tutorial for you to try.
First you will need a chocolate cake recipe
I found a fantastic one from Allrecipes.com click HERE if you would like to try it.
Once you have your chocolate cake recipe you will need
12 small terracotta pots (I got mine from Hobby Lobby a 6 pack was a little less than $3.00)
1 bag of regular marshmallows
1 bag of orange candy melts
Orange sprinkles (the fine sugar kind)
8 oz of crushed chocolate cookies (I used the 100 calorie pack and it took 3 bags)
Cupcakes with chocolate frosting
1 package of green grass (I found some in the market section of Target where they had the Easter cup cake/ cake decorating things)
First:
Make your cupcakes as usual with the paper liners. As soon as they are finished cooking take the cupcakes out of the pan and put into the terracotta pots. (Keep the liners on them)
Next:
Let your cupcakes cool completely. While that is happening you can make the carrots.
Simply melt your orange chocolate like it says on the package.
Take a marshmallow and dip in the chocolate until it is covered then dip one end in the orange sprinkles. {A tooth pick works great to do this}
Repeat until you have enough marshmallows to put one on each cupcake.
(Put the marshmallows on a cookie sheet with wax paper after they are coated)
Once you are finished take a tooth pick and put a hole in the top (sprinkle side) of the marshmallow and insert two or three small strands of "grass" once you have done this on each marshmallow place them in the refrigerator.
The cupcakes should be room temperature now :)
simply put chocolate frosting on each one. This is so easy because it doesn't need to be perfect as a matter of fact using a fork to put it on is best because it gives it that "dirt" look.
After you have them frosted dip each one into your crumbled up cookie...
I made mine with larger chunks because I think it gives it more of the dirt look.
now you can take your "carrots" out of the refrigerator and simply place them onto your cupcake. I sort of pushed mine down a little to make it look like it is in the dirt.
And, there you have it! Carrots that anyone would love to eat.
